- The unhatched pistachio kernels are carefully picked from the trees when they are not yet ripe and then undergo a peeling process to reveal the green kernel.
- Green shelled pistachio kernels are classified into seven classes according to their green colour density: A, B, C, D, E, F and G.
- In this grouping, Class A is the darkest green colour and Class G is the lightest yellowish-green.
